How 2 – Community dine @ Pubologi (Stockholm)

On Stora Nygatan in gamla Stan the tourist center of Stockholm you can find Pubologi, maybe the biggest surprise of excellence in the week of dining.
Pubologi is again a proponent of this Swedish movement of simplicity, ingredients, community and down to earthiness that we had encounter again and again this last 7 days.

The touristy quarter of Gamla Stan is overflowing with good eateries – a few I havn’t visited but know of are: Frantzén (& The flying elk), 19Glas Bar och Matsal, Djuret and Svinet.

Amuse bouche – Scallop
Warm bread and olive oil

Butter fried girolles, baked mushroom Dashi, grated summer truffle, raw shaved porcini mushrooms, puffed wild rice, crispy sour dough, split peas and jus of chives.

2010 Mersault – Domain Prieur-Brunet, Bourgogne, France

Coarse tartar of dry aged beef, Arbequina-oil, charcoal grilled onion emulsion, burned leak, grated Parmigiano-Reggiano 2011 and cress.

2009 Grüner Veltiner, Josef Jamek, Austria

Fried pike perch, mussel emulsion, grilled baby leek, cucumber in caramelized butter, zucchini
…. And mussel bouillon.

2010 Châteauneuf-du-Pape – Fomaine de la Biscarelle, Rhône, France
Saddle and heart of lamb grilled on char wood, creamy and crisp Jerusalem artichoke, sauteed black cabbage, lamb-jus and grated duck liver “Au Torchon”.
Charcoal grilled coarsely minced burger of dry aged cow, sesame brioche, Panceta Iberico de Bellota, truffle mayonnaise, Manchego and pickled silver onions. Side: Panko-onion rings.

Blueberries, almond cake, almond cream, almond milk sherbet, sugar pickled ginger and whipped cream

Grated Comté 24 month cheese, roasted hazelnuts, grated summer truffle.

And an Espresso – BLACK

Definitely more Gastro than pub the Bib gourmand is well deserved! Everything was excellent but Tatar was Outstanding  and Girolle, Perch and burger was above average top notch.

The food is more in the direction of classical than modern, comforting without getting heavy.

Finishing Stockholm dining for this year… I was surprised how many fantastic places have sprung up the last couple of years… excellent dining & reasonable prices.
We will be back soon, not only to Stockholm but surely also to Pubologi!

Lessons Learned
  • Ordered the Burger in supplement to share = No regrets
  • Well sized menu and wine in supplement is very good Stockholm Value
  • Life is good, very good….
